I’m a staunch anti-avocado individual. I know, I know, they are super healthy and amazing for you. So good, I should probably just rub them all over my face. But I have never been able to get over the texture, the color, the process of actually getting the avocado out of its thin little shell. I don’t eat guacamole, I probably never will, mostly out of principle at this point. So truly, when I saw this recipe I thought, yuck and then no way, but I know that this no sugar, no indulgence thing is going to bite me in the butt sooner or later so I thought, why not make this and see what happens. Maybe this is enough to tide my buns over until I ride this wave out. It does have light agave nectar but my no sugar thing isn’t meant to be as strict as all that. Agave is naturally occurring, so I am clear to consume it. The cocoa powder is unsweetened so I’m good there too. All I needed was for this to taste as good as promised and I’m a golden pony.
So I put this all into my blender and whipped it into a frenzy. After two minutes, I started to become a believer. It looked and felt and wait, wait, wait, tasted like chocolate pudding. My prayers have been answered. But really, I still hate avocados.
2 ripe avocados, peeled & chopped
1/3 cup raw cocoa powder
1/4 cup light agave nectar
1/2 cup milk (I used almond but regular or coconut is fine too)
1 1/2 teaspoon vanilla extract
Blend until smooth.
Chill and enjoy.
