Cranberry Orange Muffins

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup melted & cooled butter (apple sauce works great too)
1 egg
1/3 cup milk
1 cup dried cranberries
2 tablespoons orange zest


1/2 cup granulated sugar
1/3 cup all-purpose flour
1/2 cup almonds, ground coarse
1/4 cup butter, cubed
1/4 teaspoon ground cinnamon

1. Preheat oven to 350 degrees F

2. Grease muffin cups or line with muffin liners.

3. Combine all the ingredients for the muffins. I usually do the dry first, add the wet right on top. Mix well, it will feel a little stiff.

4.For the topping, place all the ingredients in a bowl. Mix with fingers and sprinkle generously over muffins before baking.

5.Bake for 20 to 25 minutes in the preheated oven, or until done.
